Hunka, Hunka Burnin' Black Bean Soup

Introduction

Hot and spicy version of Black Bean Soup that is made in the Crockpot. So yummy! Great served with crushed tortilla chips and toppings such as green onion, fat free cheese and sour cream.

For an extra kick I use Rotel Hot instead of regular diced tomatoes and green chilies.

Ingredients

    340g - Dry black beans
    175g - onion diced finely
    2 bunches - cilantro finely chopped
    1 can - hominy, drained
    2 can - Rotel
    1 can - chili style diced tomatoes
    40g - Serrano peppers, finely diced
    76g - Jalapeno Peppers, finely diced
    4 cups - chicken broth
    4 cups - water
    garlic powder to taste
    cayenne pepper to taste
    seasoning salt to taste
    cumin to taste

Directions

Combine all indredients in Crockpot. Cook on low for 6-8 hours. Serve over tortilla chips with any additional toppings that you desire (not included in nutritional information)

Makes 20, 1 cup servings.
