Vegetable Chicken Bake

Introduction

Ingredients

    8ox chicken breast cut into cubes
    1/2 cup low sodium chicken broth
    1/2 cup green beans cut into pieces
    1/4 medium carrot, sliced diagonally
    1 large rib of celery
    1/4 t. poultry seasoning
    1/8 t. Morton lite salt
    dash pepper
    2 t. cornstarch
    1/2 cup skim milk
    2 T. white wine
    1/3 cup panko breadcrumbs

Directions

Saute chicken pieces in pan until cooked through. Remove and add broth to deglaze. Add vegetables, and seasonings. Bring to boil, reduce heat cover and simmer for 5 minutes. In a small bowl, mix cornstarch and milk. Add mixture to pan, whisk untli thickened. Stir chicken and wine into pan. Pour into casserole coated with cooking spray, sprinkle with breadcrumbs. Back uncovered at 350 for 20 minutes until heated through. Serves 1.
