Banana Nut Muffins

Introduction

This recipe makes 12 good sized muffins. They're easy to grab and go when I need a meal on the run and I don't get hungry again for a couple of hours! This recipe makes 12 good sized muffins. They're easy to grab and go when I need a meal on the run and I don't get hungry again for a couple of hours!
Number of Servings: 12

Ingredients

    1 cup all-purpose flour
    1 cup whole wheat flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup butter
    3/4 cup natural cane sugar
    2 eggs, beaten
    2 1/3 cups mashed overripe bananas

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs, mashed bananas and walnuts until well blended. Stir banana mixture into flour mixture; stir just to moisten. Scoop into lined muffin tin.

Bake in preheated oven for about 25 minutes, until a toothpick inserted into center of the loaf comes out clean.
