Mandarin Chicken Salad

Introduction

A classic meal for any time any where. A classic meal for any time any where.
Number of Servings: 6

Ingredients

    3 cups cooked chicken (light meat), chopped
    2 tbsp fresh lemon juice
    1 cup of celery, chopped
    1/2 cup slivered almonds
    1 tbsp onion, minced
    1 11 oz. can of mandarin oranges, drained
    1/3 cup mayonnaise
    1 tsp salt
    6 pitted olives
    6-8 lettuce leaves
    1 cup seedless grapes

Directions

Combine chicken, onion, salt, juice, and celery in a big bowl. Refigerate for several hours. Before serving, toss with grapes, mayo, and all but the almonds, olives, and a few orange slices. Line salad bowl with lettuce leaves. Fill in chicken mixture and garnish with the remaining oranges, almonds, and olives.
