Introduction

A great way to get more beta carotene into your kids, and to add some color to your plate. Serve for breakfast, brunch, or a side to compliment a lunch or dinner entree. Can also be served for special occasions. A great way to get more beta carotene into your kids, and to add some color to your plate. Ingredients

    2 large sweet potatoes, skinned, chopped
    2 T butter or margarine
    2 tsp vanilla extract
    1/2 T ground cinnamon
    1/4 c milk

Directions

Boil sweet potatoes for 20 minutes. Drain, and return to hot pot. Add butter, and start mashing once the butter has started to melt. Add remaining ingredients, and mash together. For a creamier texture, use a mixer. Salt to taste, if desired.

Note: using more butter, or cream instead of milk, will make it taste much better, but will also greatly increase the calorie content.
