Introduction

Enjoy this tasty bean meat and cheese combo with salsa and sour cream. It is a warm treat with crispy edges and works great to make and reheat for leftovers! Enjoy this tasty bean meat and cheese combo with salsa and sour cream. It is a warm treat with crispy edges and works great to make and reheat for leftovers!
Number of Servings: 20

Ingredients

    1 lb. lean ground beef
    1 large yellow or white onion, chopped
    1 pkg taco seasoning
    2 (16 oz) cans black beans, drained
    2 (16 oz) cans red kidney beans, drained
    2 cups shredded cheese (mozzerella and cheddar blend)
    1 package Whole Wheat tortillas

Directions

Brown lean beef and onions in skillet. Add taco seasoning and beans and stir to combine. Preheat oven to 350F. Spray a 9 x 11 pan or glass baking disk with cooking spray. Cover bottom of dish with tortillas, add a layer of meat and bean mixture, cheese and top with tortillas. Add additional layers of meat/bean mixture, cheese, and tortillas. For the final/top layer it will end with cheese. Place into a 350F oven for about 25 minutes or until cheese is bubbly on top.
