Spanish Rice

Introduction

For when the summer veggies come pouring in! For when the summer veggies come pouring in!
Number of Servings: 4

Ingredients

    1 onion, chopped
    1 green pepper, chopped
    3 ripe juicy tomatoes, diced
    2 cups brown rice
    1 tbsp olive oil
    1 tsp cayenne pepper (or to taste)
    1 tsp sale (or to taste)
    dash of black pepper

Directions

Chop onion and pepper, saute in large pot in oil.
Add tomatoes and rice, add four and a half cups of water and spices.
Bring to a simmer, stir well, cover and simmer for 30 min or until rice is tender.
Fluff with a fork and serve
If desired you can add grated cheese on top, but this will change the nutritional information. For a main dish I sometimes stir in chopped tofu with the rice.
