Hunter-Style Chicken

Ingredients

    1 (2 1/2- 3 lbs) chicken cut into 8 pieces skinned
    1/2 tsp salt
    1/4 tsp fresh ground pepper
    3 tsp olive oil
    1 onion, chopped
    3 garlic cloves, chopped
    2 assorted color bell peppers, seede & cut into 1/2 inc pieces
    1/4 lbs fresh white mushrooms, sliced
    1 celery stalk, chopped
    1 jar ragu robusto parm and romano cheese
    1 box healty Harvest Whole wheat blend (optional)

Directions

1. Sprinkle the chicken w the salt and ground pepper. Heat 2 tsp of the oil in a large skillet over med-high heat. Add the chicken and cook until brown, 3-4 min on each side. Transfer the chicken to a plate & set aside.
2. Heat the remaining 1 tsp oil in the same skillet over med-high heat. Add the onion and garlic; cook, stirring occasionally, until softened, abt. 3 mins. Add bell peppers, mushrooms, and celery; cook, stirring occasionly, until softened, 5-6 mins. Return the chicken to the skillet; add pasta sauce and stir to coat. Bring the mix to a boil. Reduce the heat and simmer, cover, until the chicken is cooked through and the vegitables are tender, about 20 mins. Serve 1 piece on the chicken & 1/2 cup vegitables and sauce on a plate with side of your choice.
3. To make it a meal add 2oz of the pasta to plate and to cover with the 1/2 cup veg. and sauce. ENJOY!
