Pancakes with Sweet Potato Puree

Introduction

Number of Servings: 16

Ingredients

    1 1/4 c. 1% milk
    1/2 c. organic sweet potato puree
    1 large egg white
    1/4 t. cinnamon
    2 c. Bisquik Heartsmart Pancake and Baking Mix

Directions

In large bowl whisk milk, sweet potato puree, egg white and cinnamon.

Add Bisquik and stir just until combined - batter will be lumpy.

Pour scant quarter cups onto hot griddle sprayed with nonstick spray.

Makes about 16-18 pancakes. Nutritional information is based on 16 pancakes.

  • Very happy with this healthy recipe. Each pancake was about 1/4 c. of batter. I got 13 pancakes. They were all about 3-1/2" dia. & 1/2" thick. They were a resilitant, spongy, moist texture. I could tell they were made with Bisquick, because there was a hint of that flavor. - 3/21/10
