Lo Fat Lo Carb Spaghetti-N-Meatballs

Introduction

The sauce without the meat is Under 100 calories.. you don't miss any flavor! This meatball and spagettie goes nicely over stripped zucchini noodles that you make yourself... (you need a special tool to do that but it is worth it if you like zucchini and want a lo carb substitute for the noodles) The sauce without the meat is Under 100 calories.. you don't miss any flavor! Ingredients

    Meatballs:
    4 oz Ground Turkey (93%lean or Hamburger 93% lean)
    1 tsp Garlic Salt
    2 Tbs Chopped Onions
    Salt and pepper
    Crushed Saltine Crackers (optional)

    Spaghetti Sauce:
    (Place in blender or magic bullet)
    1/4 cup Chicken Broth (can substitute beef but I prefer chicken)
    1 Cup Fresh Tomatoes- quartered
    2 Tbs Tomato Paste
    2 cloves Garlic (minced)
    Then add to your own preferences Italian seasonings such as: oregano, cilantro, basil, parsley etc.
    2-3 txp Garlic powder
    Add salt and pepper to taste,

    Noodles:
    Strip Zucchini in noodles with the Titan noodle maker.

Directions

Meatballs:
4 oz Ground Turkey (93%lean or Hamburger 93% lean)
1 tsp Garlic Salt
2 Tbs Chopped Onions
Salt and pepper
Crushed Saltine Crackers (optional)

Mix above ingredients in a glass bowl, wet hands and roll meat into about 8 balls. Cook in oven at 350 degrees for approx 20 minutes (or fry in pan). While this is cooking make spaghetti sauce.


Spaghetti Sauce:
(Place in blender or magic bullet)
1/4 cup Chicken Broth (can substitute beef but I prefer chicken)
1 Cup Fresh Tomatoes- quartered
2 Tbs Tomato Paste
2 cloves Garlic (minced)
Then add to your own preferences Italian seasonings such as: oregano, cilantro, basil, parsley etc.
2-3 txp Garlic powder
Add salt and pepper to taste,
Blend till smooth
Simmer on stove till color darkens. Then Add meatballs and simmer for 5-10 more minutes

Noodles:
Strip Zucchini in noodles with the Titan noodle maker. Put in sauce pan and bring to boil. As soon as this boils cook to desired consistence, and drain,

Place noodles on a plate and add meatball sauce. Serve hot.
