Chicken Cordon Bleu

Ingredients

    4 boneless chicken breasts
    4-1oz. slices of thin, low-fat ham, cut into two equal halves
    4-1 oz.slices of swiss cheese, cut into two equal halves
    1/4 cup minced fresh parsley
    1 t. salt
    1/2 tsp. pepper
    1 large egg whisked in a shallow bowl with 1 tsp. water
    1/4 cup all-purpose flour
    1 cup unseasoned dry bread crumbs
    1.5 T. margarine
    1.5 T. olive oil

Directions

Rinse and pat dry 4 chicken breasts.
Trim any fat and place breast pieces between sheets of wax paper and gently pound with a mallet until about 3/8 inches thick. Divide each breast into two equal size portions.
Spinkle breasts with salt and pepper.
Place 1/2 slice of ham and 1/2 slice of Swiss cheese onto each breast portion; fold breasts in half over ham and cheese. Make an 1/8 inch cut into folded side to help prevent the chicken breast from opening during cooking.
In a shallow bowl, mix 1 c of bread crumbs with parsley, salt and pepper.
Spread the flour onto a 10 inch dinner plate.
Press folded chicken breasts in the flour; dip into the egg/water mixture, and then gently dip into the bread crumb mixture to coat chicken.
Heat skillet over medium high heat with margarine and olive oil added.
Place chicken in skillet to cook, approximately 4-5 minutes per side, longer if the chicken is too thick.
Drain on a paper towel and serve immediately.
