The roomies LOVE Hamburger helper, so I wanted to make a healthier alternative.
1 lb ground turkey
1/2 onion, diced
2 tsp minced garlic
1 can cream of mushroom soup, reduced fat
2 cups mushrooms, sliced (I used button and baby bellas)
1 tbsp salt
1 tsp black pepper, ground
3 cups egg noodles
Saute onions and garlic in butter, add vegetable stock as needed to keep moist
Add mushrooms, and additional stock as needed.
Return browned turkey to pan, add soup
Reduce heat to simmer, cover and cook approximately 15 minutes.
While that's cooking, boil water and cook egg noodles.
Drain and add to meat mixture
add sour cream, salt and pepper, and mix well
