Toasted Potatoes

Introduction

This dish is my version of roasted potatoes but the kids call it toasted so there you have it. I got it off the Lipton box but have tweaked it a little to suit our needs. This dish is my version of roasted potatoes but the kids call it toasted so there you have it. I got it off the Lipton box but have tweaked it a little to suit our needs.
Number of Servings: 6

Ingredients

    4 cups diced, cooked potatoes
    4 Tablespoons onion mix
    1 Tablespoon olive oil

Directions

Heat skillet on medium. Coat bottom with olive oil.
In large bowl combine potatoes and onion mix and thoroughly mix. You may find it useful to place in a large pot with a lid and shake it around so that it coats evenly.
Spoon mixture into skillet and cook until browned, stir occasionally. You may need to add another Tablespoon of oil if the potatoes seem too dry. This dish is also good to add onions and a variety of bell peppers to.
Makes 6 servings of 1/3 cup.
