Naked Chicken Burrito

Introduction

I love these at a local fast food resturaunt, but making them at home saves money and is healthier. This is a quick and easy dinner that the family loves.

Make this with brown rice and reduced fat or fat free cheese (or skip it altogether) to lighten this up.

I serve this family style, with both black and pinto beans for the family to choose between, and sour cream and soft tortillas on the side (also good with corn chips)

Ingredients

    1 cup of cooked rice
    1/2 cup of canned black beans
    3 ounces of chicken taco meat (made with boneless skinless chicken breast, rotel, and taco seasoning)
    1/8 cup of shredded cheddar cheese
    pico de gallo

Directions

Layer the rice, beans, and taco meat in a bowl, top with cheese and pico.

I usually have 1/2 of an 8 inch whole grain tortilla with this, this is not included in the nutritional information.
