Kraft Mac & Cheese (1 cup serving) kec

Introduction

While Kraft Mac & Cheese is by no means a "health food" it still is a comfort food. This is how I've been preparing it since switching to smart balance buttery spread several years ago. Even with my substitutions it is still very caloric and high in sodium, simply because of the way the company processes the mix. My goal in making the substitution was to reduce the calories while still having it taste just as good. If prepared according to the package directions a 1 cup serving = 410 calories. Using skim milk and smart balance makes a 1 cup serving 375 calories. Granted the 35 calorie difference isn't huge, but every little bit helps when you're trying to lose weight and still want some of your old favorites. Ingredients

    2 boxes Kraft Mac & cheese (7.25 oz each)
    8 Tbsp Smart Balance buttery spread
    1/2 cup skim milk

Directions

Follow directions on the box. Boil the noodles for 6 minutes, then drain. Use smart balance instead of margarine, and skim milk instead of 2% milk.
The serving size is approximately 1 cup, (3 cups per box prepared).

    Even with the skim milk, the fat and sodium per serving set off heart alarms. - 6/14/09

    Yes the sodium is bad. This is a major problem with all highly processed foods such as Kraft Mac & Cheese. As for the fat, smart balance buttery spread, with no trans fats, is one of the healthiest and best tasting spreads available. Once in a while, this is ok; everything in moderation.
