IntroductionA healthy, easy and flavorful rice dish. A healthy, easy and flavorful rice dish.
2 cups Uncooked brown rice
4 Chicken thighs
1 jar Marinated artichoke hearts, chopped.
1 jar Roasted bell peppers, chopped
1 Onion, sliced.
1-14 oz Can diced tomatoes
2-14 oz Cans chicken broth
1 cup Water
1/8 teaspoon Saffron
˝ teaspoon Oregano
Salt and Pepper
Season chicken with salt, pepper and paprika. In a large skillet, sauté chicken. Cube chicken. Set aside.
Sauté onion in skillet.
Add rice to skillet, and allow to toast for a few minutes.
Add chicken back to pan. Season with oregano, paprika, salt and pepper.
Add broth, water and juice from tomatoes. Cover and simmer for 20 minutes.
Stir in artichoke hearts, tomatoes and roasted peppers. Re-cover and simmer for 15-20 minutes.
