Cheese Omelette (Mexican Style)

Introduction

A low calorie omelette with a slight mexican flare.
You could substitute Ebb Beaters but I use Better'n Eggs because it's lower in sodium.

Ingredients

    1/2 cup Better'n Eggs
    1/4 cup Kraft Mexican Style 4 Cheese Blend (2% Milk)
    *Pam - Olive Oil Cooking Spray
    40 grams diced tomato
    25 grams chopped mushroom
    10 grams minced scallion
    2 TBSP Salsa

Directions

Lightly spray a small pan with Pam. Cook scallions, mushrooms and diced tomatoes until soft, about 3 mins. Remove from pan, set aside and lightly sray the same pan again with Pam. Pour in Better'n Eggsand cook over medium high heat until the mixture just starts to bubble. Lightly scrape the side of the pan so that the cook part of the eggs are moved aside and the liquid can now cook. When most of the eggs are cooked but still runny on top, turn the heat down to low and pour the mushroom, tomato and scallion mixture on one side of the eggs. Top with cheese and fold in half. Cover with lid and cook until cheese has melted, about 1-2min. Remove from pan, top with salsa and enjoy.
