Broccoli, Cheese and Turkey Bacon Stuffed Chicken

Introduction

Number of Servings: 6

Ingredients

    1 package chicken tenderloin (6 pieces)
    4 slices turkey bacon
    1 1/2 C. chopped broccoli (already cooked)

    1/2 T butter
    1/2 T flour
    1/2 C. milk
    1/2 C. sharp cheddar cheese

    1/2 C. egg whites
    1/2 C. flour
    1/2 C. Italian bread crumbs

Directions

Recipe makes 6 servings.

1. Brown turkey bacon. Crumble.
2. Cook broccoli. Chop finely.
3. Begin by pounding the chicken flat, between 1/4-1/8 in.

To make cheese sauce:
1. Melt butter in a saucepan.
2. Add flour and let cook on medium-low until flour begins to thicken.
3. Add milk and continue to mix.
4. Once mixture thickens, remove from heat and stir in cheese.

To Complete the Dish:
1. Combine cheese sauce, broccoli and bacon in a bowl.
2. Spoon about 1 T. of mixture onto the chicken and spread.
3. Roll up chicken and skewer with a toothpick to hold closed.
4. Dip chicken in flour, then egg whites, then breadcrumbs to create a crust on the chicken.
5. Place in baking dish. Cook at 400 degrees for about 40-45 min (until the chicken has a nice crust and is cooked through).
