Salmon en croute with spinach

Salmon en croute with spinach

Ingredients

    1 3 oz fillet of pink salmon
    3 sheets Athens Fillo (Phyllo) Dough
    sprinkle of garlic powder and thyme
    1 cup fresh spinach leaves
    Remoulade Sauce
    For Remoulade Sauce mix
    for each recipe of salmon:
    2 tbsp. Kraft Fat Free Mayonnaise
    1/8 tsp paprika
    1/2 tsp Worcestershire Sauce
    A pinch of celery seed
    1 tsp finely chopped onion
    1/8 tsp lemon juice
    2 tsp. ketchup
    1 tsp Grey Poupon Mustard
    1/2 tsp horseradish or Wasabi

Directions

Spray one side of each of three sheets of phyllo with Olive Oil Spray Pam and stack together. Place fillet in center and sprinkle a little garlic powder and thyme over fillet. Fold edges of dough over each other to form a pouch around the fish. Spray top with Olive Oil Pam and place filllets, seam side down, in a nonstick baking pan. Bake for 30 minutes at 350 degrees.

Mix all sauce ingredients and set aside in refrigerator.

When fish pouches are brown and crispy, remove from oven and set aside. Arrange spinach leaves in a bed on a plate and immediately place hot fish pouch on leaves. Put several dollops of sauce on top of pouch and serve.
