Flax Seed Blueberry Pancakes

Introduction

I have to be honest- I'm really not sure how many blueberries I had exactly. I know I put in a lot. I had a bunch left and before they went bad I knew I needed to use them....so I did. These pancakes were so chock full of berries. They're very hearty and they're sweet enough to eat by themselves with out syurp...which adds more calories! These pancakes were so chock full of berries. They're very hearty and they're sweet enough to eat by themselves with out syurp...which adds more calories!
Number of Servings: 13

Ingredients

    1 cup of Whole Wheat Flour
    1 Tbs Milled Flax seed
    1/4 tsp salt
    1 tsp baking powder
    6 Tbs sugar
    1 egg
    1 cup skim milk
    2 1/2 cups of Blueberries

Directions

Add all the ingredience (except blueberries) into a bowl and wisk together. Once fully mixed, fold blueberries in. Place a non- stick pan on medium heat and drop heaping 1/4 cups of batter into pan. Wait until you can see bubbles in the batter and flip the pancake to cook other side.

Recipe makes aprox 13- 5 inch pancakes about 1/2 inch thick.
