Zesty Veggie Shrimp Pasta

Introduction

Ingredients

    8 oz. Angel Hair Pasta
    10 Tablespoons Light Italian Dressing, divided
    1 small onion, chopped
    2 cloves of garlic, crushed
    2 cups of slices mushroons
    1 can (14 oz.) of artichoke hearts, drained and quartered
    24 medium sized shrimp
    1 tablespoon of fresh parsley or basil
    1/4 cup of grated parmesan

Directions

As pasta is cooking (as directed on package), heat 6 tablespoons of italian dressing on medium heat. Cook onion and garlic for 2 minutes (until onion is translucent). Add mushrooms and quartered artichokes and cook for an additional 2 to 3 minutes, stirring occassionally. Add shrimp and spice. Cook a couple more minutes until shrimp are pink and vegetables are at desired tenderness. Drain pasta and divide into 4 servings. Stir reamining 4 tbls. of italian dressing into shrimp mixture and place shrimp mixture on top of pasta. Sprinkle with cheese
