Banana Walnut Muffins

Ingredients

1 cup white wheat flour
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp allspice
1/4 tsp salt
1/2 cup brown sugar
1/4 stick unsalted butter (2 tbsp)
6 tbsp unsweetened applesauce
3 mashed ripe bananas
1 tsp vanilla extract
1 egg
1/4 cup chopped walnuts
Directions
Mix dry ingredients and set aside. Cream butter and sugar. Mix bananas, applesauce, vanilla, and egg. Add butter/sugar mixture to applesauce mixture. Add dry ingredients and mix well. Fold in walnuts. Makes approximately 16-20 muffins. I make this times six, which is why the nutritional info says makes 96 muffins, but probably everyone else is not into bulk baking!
