Thai Chicken Coconut Soup

Introduction

A delicious one course meal! A delicious one course meal!
Number of Servings: 8

Ingredients

    5 cans (14.5 oz) fat free chicken broth
    1 can coconut milk
    1 can sliced water chestnuts
    1/4 cup lime juice
    3 Tbsp. fresh cilantro
    2 Tbsp fresh basil
    1/4 cup fresh ginger root, julienne sliced
    1 Tbsp Thai Chili Sauce
    2 chicken breasts, cooked and cubed
    1/2 cup sliced raw carrots, or baby carrots
    2 cups rice noodles (udon) cooked
    1 cup fresh bean sprouts
    1 cup fresh snow peas
    1 cup fresh sliced mushrooms
    1/4 cup scallions / green onions






Directions

Place first 10 ingredients in a large pot and heat through. Add noodles, bean sprouts, snow peas, mushrooms and green onions just before serving to heat through. Don't cook for too long as veggies should remain crisp. Enjoy!
Makes approximately 8 1 1/2 cup servings.
