Introduction

Recipe originally calls for black-eyed peas. Adzukis worked well though. This was originally a recipe given to me by a chef who specializes in healthy, low fat vegan food. Ingredients



    * *Beans, adzuki, cooked, 8 cups
    * Onions, raw, 1 medium (2-1/2" dia)
    * *Bell Pepper, red, raw, 164 gram(s)
    * Celery, raw, 4 stalk, medium (7-1/2" - 8" long)
    * just roasted garlic, 1 tbsp
    * Bay Leaf, 2
    * *Coriander seed, 2 tsp
    * *Cumin seed, 2 tsp
    * Oregano, ground, 2 tsp
    * Paprika, (pimenton) .5 tsp
    * 365 Organic Vegetable Broth, 8 cup
    * *Rapunzel Vegan Vegetable Bullion w/ Sea Salt & Herbs, 2 serving (1 cube)
    * *Braggs Liquid Aminos, 2 tsp
    * *Marmite, 1 tsp
    * *Basmati brown rice,raw 4 cup
    * *Pasilla Pepper, .125 serving

Directions

Makes 19 1-cup servings

Chop all veggies, and add to broth with spices. Add rice and stir for a few minutes. Add beans and put everything in oven for 45-60 minutes. Make sure pan is covered or the rice on top will dry out. When rice is cooked, remove from oven and let sit for about 20 minutes. Can be topped with chopped parsley.
