Summer's Bounty Zucchini-Tomato Saute

Introduction

As everyone who has a garden knows, having one zucchini plant provides enough zucchini to end world hunger! I'm always looking for new ways to utilize them. I came up with this in a moment of desperation! As everyone who has a garden knows, having one zucchini plant provides enough zucchini to end world hunger! I'm always looking for new ways to utilize them. I came up with this in a moment of desperation!
Number of Servings: 2

Ingredients

    Zucchini, cut in half and sliced to make half moons
    Onion, chopped course
    cherry tomatoes, cut in half
    garlic, chopped
    olive oil
    balsamic vinegar
    salt
    pepper

Directions

Heat saute pan over medium high heat. When hot, add olive oil, onions and garlic. Saute for 1-2 minutes, then add zucchini, and continue cooking until zucchini is almost tender, then add halved tomatoes. When the tomatoes are hot, toss in the balsamic vinegar and salt and pepper to taste.
