Spinach Casserole (VegWeb.com)

Ingredients

    Spinach, cheese, tofu, onions, marinara sauce, garlic & olive oil.

Directions

Saute chopped onion & garlic in olive oil. Thaw and drain frozen spinach. Drain and crumble tofu and mix with spinach. Add 1 cup spaghetti sauce and onions. Stir well. Spray casserole dish with non-stick cooking spray. Pour mixture into small casserole dish and cover with half of the shredded cheese. Bake at 350 degrees for 20 minutes. Add remainder of cheese, and bake another 10 minutes.
