Decadent Pasta Primavera

Introduction

This delicious dish tastes sinful, but don't be afraid! This will easily fit into your nutrition plan! This delicious dish tastes sinful, but don't be afraid! This will easily fit into your nutrition plan!
Number of Servings: 4

Ingredients

    1 tbsp Olive Oil
    1 medium carrot sliced
    1 medium onion sliced
    1 or 2 Green, Red, Yellow, or Orange Bell Pepper
    1 can Hunts Diced Tomato
    2 chicken breasts (approx. 1 pound)
    1.75 cups Classico Sundried Tomato Alfredo Sauce

    **Whole Wheat Rotini Pasta (NOT included in nutrition info)

Directions

Cook desired amount of pasta according to directions on box. I usually use one serving of pasta(according to box) for each person
Heat oil in large pan.
Add carrot, onion, bell pepper, and garlic. Saute til veggies are tender. Add canned tomato, any seasonings you prefer, and 1jar (1.75 Cups) Sundried tomato Alfredo sauce. Heat through and allow to simmer to combine flavors.
Top the cooked pasta with pasta sauce.

Makes 4 servings.
