Apple Streusel Muffins

This is adapted from the Company's Coming recipe -- I decreased the oil and substituted with unsweetened applesauce, only put in half the sugar, and increased the apples 'cause I love chunks of apple in there! Ingredients

TOPPING:
1/4 cup brown sugar, packed
2 Tbsp whole wheat flour
1 Tbsp margarine, softened
1/8 tsp cinnamon
MUFFINS:
1 1/2 cups whole wheat flour
1/4 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1 egg
2/3 cup 1% milk
2 granny smith apples, coarsely chopped (about 2 cups)
2 Tbsp cooking oil
2 Tbsp unsweetened applesauce
Directions
TOPPING: In small bowl rub together first amounts of sugar, flour, butter, and cinnamon until crumbly. Set aside.
MUFFINS: In mixing bowl stir together second amounts of flour, sugar, baking powder, and salt. Stir. Make a well in center.
In another bowl beat egg, milk and cooking oil to blend. Drain off excess moisture from apples (in particular if you've used a food processor or blender to chop them). Stir into egg mixture. Pour into well. Stir just until moistened. Fill greased muffin cups 3/4 full. Sprinkle with topping. Bake in 400F (200C) oven for 15-20 minutes. Makes 12.
