Lemon Caesar Salad

Number of Servings: 12

Ingredients

    1 tsp grated lemon peel
    3 Tbsp lemon juice
    1 tsp Dijon mustard
    1 tsp anchovy paste
    1 tsp Worcestershire sauce
    2 garlic cloves, minced or pressed
    tsp salt
    C light olive oil
    C Canola oil
    3 Tbsp non-fat sour cream
    1 pkg Splenda

    10 C Romaine Lettuce, torn into bite size pieces for salad
    4 oz (1 C) Parmesan cheese, grated
    Croutons, 1 to 1 C.

Directions

In med. bowl, using wire wisk or stick mixer, blend all incredients for dressing except oils and sour cream. Gradually add oils, mixing until smooth and well blended. Add sour cream and blend until smooth.

In large bowl, tear the greens. Pour dressing over salad immediately before serving as lemon juice will wilt greens. Add cheese and croutons. Serves 12.
