Chicken Meatballs

Introduction

Can be eaten alone as a main dish or added to any kind of sauce which would contain meatballs. Can be eaten alone as a main dish or added to any kind of sauce which would contain meatballs.

Ingredients

    2.5 pounds ground chicken breast
    1.25 pounds chicken sweet Italian sausage
    .5 cup rolled oats
    .5 cup Egg Beaters (or other egg substitute)
    1 tablespoon salt
    1 teaspoon ground pepper
    1 large red onion, finely chopped
    8 cloves garlic, finely chopped
    1/2 cup fresh parsley, chopped
    2 tablespoons extra virgin olive oil

Directions

Saute onion and garlic over medium heat in a preheated pan sprayed with nonstick spray (like Pam) 5 to 10 minutes or until soft.

Meanwhile, mix together the ground chicken breast (2.5 pounds), chicken Italian sausage (1.25 pounds), oats, egg substitute, extra virgin olive oil, parsley, salt, and pepper. Add the cooked onion and garlic and gently mix together.

Form 60 1 1/2 inch meatballs and place on cookie sheet lined with aluminum foil or parchment paper. You can occassionally rub your palms with extra virgin olive oil to prevent meat from sticking. Bake at 400 degrees for 45 minutes or until juices run clear when meatball is pricked.

Great for freezing and later use.

Makes 12 servings of 5 meatballs each.
