Super Simple Cajun Shrimp Pasta (Clean)

Submitted by: ALYNNOX

Introduction

Very quick, easy and "clean" (natural) cajun shrimp and pasta dinner. Delicious as is but also very easy to modify to meet your tastes. Use any seasoning blend, any cheese you like (or skip it) and add whatever vegetables you have on hand if you have a little more prep time. Ingredients

Whole grain/ wheat ,all natural pasta (any style, I prefer Barilla brand)
    1- 1.5 pounds shrimp
3 tbsp extra virgin olive oil (EVOO)
Cajun seasoning blend (Includes red pepper, garlic, basil, oregano, coriander & salt)
juice from 1 med- large lemon
.5 cup natural finely shredded parmesan cheese (optional)

Directions

1. Get water boiling for pasta while you peel the shrimp.
2. Once shrimp is peeled, sprinkle with cajun seasonings.
3. Add pasta to boiling water and cook per package instructions.
4. In a large pan, heat about 2 tbsp EVOO and the juice from one lemon.
5. Once oil/lemon juice is hot, add the seasoned shrimp to the pan (plus veggies if you are adding veggies). Saute until done.
6. Drain pasta.
7. Toss together the cheese, pasta, about 1 tbsp of EVOO, and the cooked shrimp.

  • Definitely simple to make as advertised! I used lime juice instead of lemon juice (because that's all I had on hand), and it worked very well. - 1/9/10
