4 cups chopped tomatoes
1 chopped medium sized onion
5 cloves roasted garlic (or 3 cloves raw garlic)
1 chopped small bell pepper (seeds optional)
2 tbsp fresh basil
2 cups chicken broth
2 Tbsp butter
2 Tbsp flour
1/2 cup fat free half & half
1 tsp salt
In another pot, melt butter and whisk in flour to make a roux. When the roux is golden brown, slowly whisk in blended tomato liquid. Add half and half and salt to taste.
Goes great with garlic croutons!
