Roasted Garden Soup

Ingredients

    6 Ripe Tomatoes, cut in half
    2 Bell Peppers, Seeded and Quartered
    2 Large Onions, cut in thick slices
    4 cloves garlic, peeled
    1 Can Reduced Fat Low Sodium Chicken Broth
    Cooking Spray
    Salt & pepper
    Assorted herbs (optional)

Directions

Preheat oven to 450. Spray large baking pan or sheet with cooking spray. Arrange vegetables on tray. Spray tops of vegetables with cooking spray, season with salt and pepper. Roast for 45 -60 minutes. Transfer to blender or food processor and add can of broth. Blend until smooth.
