1 package frozen spinach
1 oz. sundried tomatoes - hydrated
1oz. reduced fat feta cheese
1/4 c. light whipping cream
spices to taste - onion powder, garlic powder, pepper
Scramble eggs in a medium sized bowl.
Squeeze as much water out of the spinach as you can with a colander or through a towel. Add spinach.
Chop and add sundried tomatoes, cream & fet cheese until mixed through. Add spices.
Spray a muffin pan with non-stick spray. fill each cup about 3/4 of the way. I got 10 mini quiches.
Bake for 20 minutes or until eggs are set. 2 quiches per serving.
