Elk Zucchini Boats

Introduction

Zucchini boats cooked with ground elk meat, the lower fat alternative to beef. Zucchini boats cooked with ground elk meat, the lower fat alternative to beef.

Ingredients

    6 med zucchinis
    1 onion chopped
    2 cups diced tomaotes
    1 cup part skim mozzarella cheese
    2 cloves garlic
    1 pound ground elk meat

Directions

Cut zucchini's in half length wize scoop out middle
saute onions, zucchini that was scooped out, garlic and meat until almost cooked, add 1.25 cups of the diced tomatoes.
Divide meat mixture eavenly into zucchini boats, spread remaining tomatoes ontop, spread cheese eavenly then bake for about 30 min on 350 degrees, or until cheese is melted.
