BLT Macaroni Salad

Introduction

This is a great alternative to the typical 'Macaroni Salad'!
Works GREAT with turkey bacon or NO MEAT Bacon!
I use vegetables from the garden for an even fresher taste!

Number of Servings: 12

Ingredients

    Macaroni, whole-wheat, cup elbow shaped
    Green Onion - 5 finely chopped
    Red Ripe Tomatoes, 1 large whole diced (3" dia)
    Kraft Mayo with Olive Oil, 1.25tbsp
    Heinz Distilled White Vinegar, 1.666tbsp
    Salt, 0.25tsp
    Pepper, black, 0.125tsp
    Bacon, 1 pound, cooked and drained well then chopped and chilled
    Celery, raw, 1.25 cup, diced
    Romaine Lettuce (salad), 12 inner leaf

Directions

Cook macaroni according to package directions; drain and rinse in cold water.
In a large bowl, combine macaroni, green onions, tomato, and celery.
In a small bowl, combine mayonnaise, vinegar, salt, and pepper. Pour over macaroni mixture and toss to coat.
Cover and chill for at least 2 hours.
JUST BEFORE SERVING: Add Bacon
Serves 12
To serve 50, multiply by 4
To serve 100, multiply by 8
