Zucchini Quiche

Introduction

Basic recipe -- can add crab or various seafood or use different types of cheeses. Basic recipe -- can add crab or various seafood or use different types of cheeses.
Number of Servings: 6

Ingredients

    2 medium-size zucchini squash
    1 medium onion, finely chopped (or reconstituted from dry)
    8 ounces Swiss cheese, shredded
    4 eggs (can substitute egg-beaters or other product)
    1 cup low-salt buttermilk baking mix
    1/4 cup oil
    1/2 tsp. No-Salt or blended seasonings
    1/2 tsp. Italian seasonings
    pepper to taste
    1 Tbsp. imitation bacon bits

Directions

Coarsely shred zucchini (peeled or unpeeled) to make about 5 1/2 cups. Toss with onion and cheese. Set aside. In a large bowl, lightly beat eggs. Stir in baking mix. Add oil, salt substitute, seasonings and bacon bits. Pour into a lightly greased quiche pan or 10 inch deep pie plate. Cook until knife inserted in center comes out clean. Serves 5-8.
