Whole Wheat Lasagna, 1 box
2 cups Onion, chopped
2 cups Green Pepper, chopped
2 cups Carrot, chopped
Fat Free Ricotta Cheese, 2.5 cup
Great Value Fat Free Cottage Cheese, 1.5 cup
Classico tomato and basil sauce, 2.5 cup
Boil lasagna noodles.
Combine ricotta and cottage cheeses and blend.
Combine veggies and blend.
Combine all ingredients except sauce.
Lay noodle flat and layer 2 TB of cheese mixture and 2 TB of veggie mixture. Roll up and put into a baking dish. Cover each roll with 2 TB sauce. Cover with foil and bake @ 350 degrees for about 15-20 minutes. Remove foil and bake for another 5-10 minutes.
This recipe makes 18 servings. You can cook less lasagna and do individual servings if you'd prefer.
