IntroductionA great and healthy way to use some of that leftover chicken (or turkey) from dinner! A great and healthy way to use some of that leftover chicken (or turkey) from dinner!
approx 2 boneless, skinless chicken breasts (depending on amount of poultry used, leftover bones are boiled)
3 stalks celery, chopped
1 cup chopped carrots
1 cup long grain white rice
While boiling, chop veggies
Strain to remove undesirables
Add celery, carrots and rice
salt to taste
Add approx 6 cubes (pkgs) OXO, if loose powder, add to taste.
Simmer until rice is cooked, about half an hour usually
Serves approx 10
**Note amount of veggies can be changed or omitted completely depending on taste or likes/dislikes
