Cheesy Caulifower

Introduction

I have a friend that makes the most awesome cheesy potatoes. I am trying the South Beach Diet and decided to try this with cauliflower. I don't think I'll ever have it with potatoes again! I would use 2 heads of cauliflower instead of 1. Usually I use a whole bag of frozen hasbrown potatoes to a tub of sour cream, but the cauliflower did not yield as much as the potatoes. Also, my friend usually used a can of cream soup to make it creamier, but I just used a couple of tablespoons of cream instead to keep carbs down. Ingredients

    1 head of cauliflower
    1 16 oz tub light sour cream (I would use half of this next time)
    1 cup of chedder cheese
    2 tbsp light whipping cream (to make it creamy)

Directions

Preheat oven to 400 degrees.

Chop cauliflower in to bite size pieces. Then steam for about 10 minutes. (I use a steamer) Meanwhile, melt butter and saute onions until nice and tender and they begin to carmelize, about 15 mins. Mix butter/onion mix, sour cream, & cream in a large bowl. Add cauliflower and mix. Then add cheese and mix. Put it all in a casserole dish and bake for 45 minutes or until browned on top.
