1 c. Quinoa
2 c. Chicken Broth, Veggie Broth, Water
2-4 cloves garlic, minced
1/2 onion, chopped
2 cups of Baby Spinach, chopped
Small White Beans, 2 can rinsed & drained
4 tsp. Olive Oil
Crushed Red Pepper
Sautee olive oil with onion and garlic, 5-8 minutes or until tender. Add beans, and cook for another 2-3 minutes. Add quinoa, then spinach. Cook until spinach is wilted. Season with salt, red pepper, and fresh basil.
