Cheddar Potato Soup

Introduction

This is a recipe I found on-line and that I have "skinny-fied" and cut the calories almost in half, but retained the hearty coziness. It's good anytime, but perfect on a chilly night. Number of Servings: 4

Ingredients

    1 c carrot, diced
    1 c onion, diced
    1/2 c celery diced
    1 t dried basil
    1 t ground oregano
    1/2 t dried thyme
    1/2 t sea salt
    1 t black pepper
    4 c chicken broth
    3 c red potatoes, with skins, diced

    Cheese Sauce:
    2 T butter
    1/4 c flour
    1 1/2 c 1% milk
    2 c reduced-fat cheddar, shredded

Directions

Generously spray large saucepan with butter-flavored spray (like Pam). Saute the carrot, onion and celery on LOW heat until onions are translucent. Add broth, herbs & potatoes. Bring to a boil, cover, reduce heat and simmer until potatoes and carrots are tender, about 15-20 minutes.

In the meantime, make the cheese sauce, as follows. Melt the 2 T butter in small saucepan, add flour and stir in well for about a minute. Slowly add the milk and whisk until smooth. Add the cheese a little at a time until completely melted. Stir the sauce into the soup. Makes 4 generous servings.
