Introduction

Great summer soup with lots of taste. Great summer soup with lots of taste.
Number of Servings: 8

Ingredients

    1 small onion diced
    1 cup diced celery
    .25 cup diced jalapeno peppers
    2 cups diced tomatoes
    2 cups grated summer squash
    1 cup brown rice
    .5 cup stewed tomatoes
    Mrs. Dash to taste
    Morton salt to taste

Directions

Saute the first three ingredients in olive oil until tender. Add the rest of the ingredents and simmer for one hour. This makes 8 1 cup servings.
