These are huge salmon cakes. You could easily get another set of cakes out of this recipe and have it yield a dozen cakes. This recipe is based on the use of leftover grilled salmon, that's why it's such a large recipe. These are huge salmon cakes. Ingredients

    Atlantic Salmon, 13 oz,grilled
    Egg, fresh, 2 large
    *Ketsup, (Heinz) 1 Tbspn, 5 tbsp
    *Dried Onion Flakes, 2 tbsp
    Celery, raw, .25 cup, diced
    Water, tap, .25 cup
    Nabisco Ritz Crackers, 3.5 serving

Directions

Mix all ingredients in a bowl except salmon and ritz crackers.
Chop grilled salmon into fine flakes, mix into bowl with other ingredients.
Crush ritz crackers in a plastic bag to create fine crumbs, place on plate and spread out.
drop salmon mix as patties onto crackers, cover, lift off and brush away excess crumbs.
put the salmon cake in an oiled frying pan, using Pam spray if possible, and cook on medium for three minutes on each side.
