Skinnier Twice Baked Potatoes

This is my favorite recipe for potatoes. You can make it even lighter by using nonfat or lowfat cheese, nonfat sour cream and nonfat milk. But I like a little fat and I used what I had available! Ingredients

3 medium baked potatoes
3/4 cup light sour cream
3 oz (about 1/3 cup) cheese ( I use colby-jack)
1/4 cup green onions
1/4 cup 2% milk
Directions
Preheat oven to 400.
Cut baked potatos in half lengthwise. Scoop out insides leaving aprox 1/8 inch shell. Place insides in a bowl and add sour cream, 1/4 cup of the cheese, green onions and milk. Stir until well-blended.
Stuff potato skins with mixture until slightly rounded and place in foil-lined or greased baking pan. Top each potato with small amount of remaining cheese.
Bake in oven for 20-25 minutes or until cheese is browned and potatos are heated through.
Makes 6 servings, 1 potato half each
