Introduction

Number of Servings: 4

Ingredients

    1 box Velveeta shells & cheese
    2 boneless-skinless chicken breasts
    2 boneless-skinless chicken thighs
    1/2 cup sour cream
    1/2 bell pepper
    1/2 sweet red pepper
    1/2 small zucchini
    1 1/2 tbsp. extra virgin olive oil
    2 tbsp. FRESH BASIL
    1 small tomato, seeded & chopped
    Seasonings to taste

Directions

Boil water for pasta and cook until al dente.
Meanwhile, heat oil in deep skillet. Saute veggies and add chicken to brown. Cover and reduce heat, just for a few minutes to speed up the cooking process.
Drain pasta once cooked.
Add pasta to chicken & veggies. Add cheese packet and sour cream. Stir until sauce is well distributed and mixed through. Heat through and remove from burner.
Chop basil & tomato. Fresh basil is important for this. Dried basil doesn't do the trick here so if you don't have fresh, don't waste your dried seasonings here. Top your dish with basil and freshly chopped tomato.
We like to add some parmesan on top of this meal as well but it's not required.

Serves about 4 -1 1/2 cup servings.
