ECONOMY GASTRONOMY Basic Turkey Mince Mixture

This recipe is not used as is, it is made in bulk to then go on to be further turned into other recipes.
Each 1kg of minced turkey (ground) becomes enough for 3 lots of meals for 4 people.

Each 1kg of minced turkey (ground) becomes enough for 3 lots of meals for 4 people.
Ingredients

2 tbsp vegetable oil
3 large onions, peeled and chopped
6 cloves of garlic, peeled and chopped
1 tsp fresh thyme, chopped
1 tsp fresh rosemary, chopped
1 kg turkey mince (ground turkey)
1 * 400g tin chopped tomatoes
1 tbsp Worcestershire Sauce
3 beef stock cubes
Directions
1. Heat a large saucepand and add half the vegetable oil, throw in the onions, garlic and herbs and allow them to sizzle away on a high heat for a few minutes. When they are softened, turn off the heat and put the pot to one side.
2. Next heat a large frying pan and, using a little of the remaining oil, fry the turkey mince in manageable batches.The idea is to colour the mince and hopefully create a bit of a crust rather than completely cook it at this stage.
3. As each batch browns, tip it out of the pan and into the pot which contains your onions, garlic and herbs. Once this process is finished put that pot back onto the heat.
4. Tip in the tomatoes and stir into the meat, add the Worcestershire sauce.
5. Meanwhile boil a kettle and make up 1 litre of stock using the 3 stock cubes.
6. Pour the stock into the now simmering beef and tomatoes and allow the whole lot to simmer for about 1 hour, uncovered until it has reduced slightly and looks like braised mince.
7. Separate into 3 portions (if you normally serve 4 people, but do otherwise to suit your needs). Refrigerate or freeze as necessary.
