1/2 cup unsweetened applesauce
1/2 cup Shedd's Spread Country Crock Light buttery spread
1 large egg
2 tsp vanilla
1 cup brown sugar, packed
5 packets Stevia extract
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 3/4 cups flour
1/4 cup wheat bran
3/4 cup quick cooking oats, uncooked
12 oz. semi-sweet chocolate chips
Cream together buttery spread, sugar, and Stevia. Add in applesauce, egg, and vanilla. Blend well. In separate bowl combine flour, wheat bran, baking powder, baking soda, and salt. Gradually mix into butter/sugar mixture. Add oats, mix well. Stir chocolate chips in with spatula or spoon.
Drop by rounded teaspoon onto cookie sheet. (I use parchment paper to keep from sticking.) Bake for 10 - 12 minutes or until golden brown. Remove from oven and cool on cooling rack. Enjoy hot or cold.
