One Dish Chicken Mushroom Casserole

Introduction

One of the few ways my husband appreciates rice and very easy to prepare in one dish. One of the few ways my husband appreciates rice and very easy to prepare in one dish.
Number of Servings: 4

Ingredients

    1 whole chicken breast quartered, no skin or bone(4 pieces)
    I can cream of chicken soup
    1 can chicken broth fat-free
    3/4 cup white rice
    2 cups fresh mushrooms, sliced
    1/3 cup shredded cheddar cheese


Directions

Mix everything together except the cheese in a 10x10 square pan, placing the chicken on top.
Bake at 350 degrees for 45 minutes.
Sprinkle the cheddar on top and return to the oven for 5 minutes.

  • This is super easy, and yummy! I have made it several times, and if you want to supsitute brown rice, just let it soak for 1/2 hour in the broth before cooking, so it gets all the way done. I also sprinkle paprika and italian seasoning on the chicken. - 9/21/11
