1 medium to large cucumber
1.5 Tblsp Olive Oil
1 Tblsp Lemon Juice
16 oz. Greek Yogurt, Plain
4 cloves garlic, minced
2. In a small bowl, mix Olive Oil & Lemon Juice.
3. Add yogurt in to oil & lemon mixture & fold over until well mixed.
4. Stir in cucumber & garlic cloves.
5. Chill until ready to serve.
Makes 4 1/4-cup servings. Excellent with chicken, fish or veggies.
